Bimla lonche in Goan style (Bilimbi pickle):






 Bilimbi fruit as called in English for the famous seasonal fruit found in Goa locally known as bimla are widely grown throughout the state in small to big home gardens. This fruit flourishes in abundance of availability of water. The bimla tree gives its fruit in lot of quantity and picks up it's place at each and every corner of the tree in small small bunches.

The taste of bimla fruit is sour and contains lot of vitamin c. If consumed raw with salt and red chilli powder tickles your taste buds but can lead you to suffer from cold. People widely consume this fruit in the form of pickle, uddamethi, and normally are put in prawns fish curry to enhance its taste.

Here I have prepared the Goan style pickle out of it whose recipe I got from my mother who is an expert in goan pickle preparations.

Ingredients:
Bimla fruits- 10-12
Mustard seeds-2 tsp
Methi seeds- 1tsp
Peppercorns-2 tsp
Kashmiri red chilli-2-3
Red chilli powder-2 tsp
Hot cooled oil-1 cup
Hing -2-3 Small pieces or 1 tsp powder.
Salt as reqd.

Method:
First wash and chop bimla fruits into roundells,apply salt and keep aside for 1 hr .
In a pan dry roast mustard, methi, peppercorn, kashmiri red chillies. Cool and grind to powder. Add red chilli powder, hing, salt and mix. Add cooled oil and mix well. Drain water from bimla pieces and add into it. Mix nicely. Put remaining oil on top and store in a porcelain jar or a glass jar. Eat after 1 hr and refrigerate at night to last longer.
