Bharillyo tazyo amlyo( whole raw mango pickle):



Raw mangoes- a seasonal fruit emerging on the mango trees in the month of April every year. Every person from children to grown ups just wait for the mango trees all around to give their fruits. All just wait for raw mangoes to develop first and once they are seen peeping from the branches and leaves of the mango tree, our eyes are satisfied and our tongues wait to have their taste either directly just salted or their pickle. When we were small our grandmother used to get the raw mangoes in bulk and sit with other ladies to prepare whole raw mango pickle and fill them in big China clay pots called bharni. We as small hardly had time to see the whole process as we were busy in our plays and therefore the recipes of our grandmothers are hardly known to many. So here I have learnt raw mango pickle recipe from my mother which I have used with some more instincts to prepare whole raw mango pickle.

Whole raw mango means the raw mango is taken in whole and 4 cuts are made from top to bottom and seed within it is discarded but the whole raw mango is kept intact. The pickle masala is prepared seperately and filled inside each whole raw mango and tightly closed as shown in my pictures. Many are filled in similar way and then placed them in a glass jar with a stone on top and kept aside for 2 days. In my house, everybody likes fresh pickle, so we eat within 1 day of filling. So I prepare the pickle in smaller quantities and once its over in a week or so, I go for a second batch. And fresh pickle consumed just after 1 day taste superb. It gives you the crunchiness of raw mango binded with the amazing flavor of pickle masala. Its just mind blowing. My way of preparing whole raw mango pickle is different from other recipes because I fill the pickle masala directly into the whole raw mangoes instead of keeping them in salted water for 2 days. My recipe varies because I prepare as my family loves. So guys , you can try my recipe once and see how you like it. So let's look at the preparation.

Ingredients:
Raw mangoes-10 nos
Peppercorns-2 tsp
Methi seeds-2 tsp
Mustard seeds-2 tsp
Shankarshap khada hing-1/2 inch piece
Red chilli powder- 1 cup
Oil-1 cup
Salt approx 1/2 cup or 1 cup depending on size of your raw mangoes.

Method:
Take whole raw mangoes and make 4 long cuts from top to bottom, discard off the middle seed and keep raw mango intact. Fill in 1 teaspoon salt inside each raw mango and place them in glass jar and keep a stone on top and keep for 1 hr.



For pickle masala- dry roast methi seeds, then peppercorns till nice aroma and keep aside. Now dry roast mustard seeds till they splutter and keep aside. In this hot roasted ingredients, add shankarshap khada hing pieces and slightly mix. Cool and grind into fine powder.

Now heat oil and cool.

In a bowl add red chilli powder, again 3 tsp salt approx, mixer grinded roasted powder, and heated and cooled oil on top as required little by little and nicely mix everything with a spoon to make a nice pickle masala paste. Retain the remaining oil aside.


Now after 1 hr of marination, salted water will be formed inside your glass jar. Now remove the raw mangoes out of jar and keep aside. Take the salted water from jar and boil it and cool.

Add this cooled salted water to pickle masala paste you have prepared earlier. Add little by little to make the paste semi- thick. Keep the remaining salted water aside.

Final step is to fill the raw mangoes with the above pickle masala paste. So fill the paste inside the whole raw mango as well as apply it in between the cuts. And press tightly to close the whole raw mango.

Now place all filled whole raw mangoes into the same glass jar and put a stone on top. Pour remaining pickle masala paste, salted water and cooled oil on top. Close the lid and keep aside for minimum 2 days.


Your raw mangoes will be marinated well in the pickle and you can relish the most delicious whole raw mango pickle as and when you wish.

Here is the image of my pickle which I have taken after 2 days out of the glass jar. Its almost ready to eat.



I have given you my measurements which are not exact but as per my calculations which can vary more or less depending on your raw mango size  and their quality too. So you can adjust the quantities of your ingredients accordingly.
