Pau bhaji parata ( A twisted recipe of pau bhaji stuffed parata):



'Pau bhaji'- the name itself reminds you of the famous Mumbai pau bhaji served on street stalls or gadas in Mumbai. Nobody can ever say no to it. The taste of original Mumbai pau bhaji just make your mouth water like anything and one cannot stop for going on for it. So coming to my new twisted recipe of pau bhaji stuffed parata, I have used the same ingredients you use to prepare pau bhaji but I have prepared the stuffing in a slightly different manner in a very dry version and combined with wheat flour to give you a new innovated pau bhaji parata.

The story behind this parata goes this way. When my kid was newly admitted to school in lower kg, we parents were always insisted to give nutritious food in their tiffin box. After trying my hands on many nutritious items,one day I combined all vegetables to come up with this new innovative parata which was just loved by my child. Then there was a cooking competition in their school for parents and the topic given was ' nutritive tiffin box'. I took part and placed this parata, and to my surprise I won 2nd consolation prize in the competition. Everybody praised on my innovation and this led to my further motivation for cooking new innovative food items. So here I have given below my recipe for you, i am sure you will definitely like it and try the same.

Ingredients:

Wheat flour-1 cup
Boiled potatoes-2
Chopped onions-1
Chopped tomatoes-1/2
Chopped capsicum-1/2
Chopped cauliflower-2-3 florets
Grated carrot-2 tsp
Boiled and smashed green peas-4-5
Chopped coriander leaves-1/2 cup
Pau bhaji masala-2 tsp
Garam masala-1 tsp
Sugar-a pinch
Salt as per taste.
Oil -1 tsp
Butter-2 tsp

Method:
In a pan, add oil, chopped onions. Saute. Then add all vegetables ( you can add whatever vegetables you have with you, adding all is optional, sometimes I do just with a single veggie like capsicum or cauliflower😀). Saute. Then add chopped tomatoes. Saute till veggies are cooked and soft.

Add pau bhaji masala, garam masala, salt, sugar. Add mashed potatoes. Mix well.



Add wheat flour and mix well.


Cool and transfer the mixture in a bowl and knead into a dough WITHOUT adding water.


Then make a parata and fry on tawa with butter on both sides.

Serve with tomato sauce.
