Moogadalichi usli ( green gram usual):


Moongdal is one of the very nutritive bean which is high in protein and easliy digestible, so light on gut so is very good for health of kids and the elderly.

Moong is the whole green gram which is used to prepare many delicious recipes, the similar way moongdal or yellow moongdal or peeled green gram is used in variety of dishes from Dal fry, dosas, vegetables etc. Today I shall you a Goan traditional recipe of it's dry preparation or usli.

Moong dal is loved by almost all goans. We use this moong dal in the preparation of nevyro filling, laddoos, panchakat, dosa etc. In some vegetable preparation like raddhish, moong dal when added enhances the taste of the vegetable. Today I shall give you the preparation of its usli which I learnt from my mother in law.

Ingredients:
Moong dal-1 cup
Green chillies-4-5 long slitted
Ginger-2 pieces finely chopped or mashed
Scraped coconut-1/2 cup
Jaggery-2-3 tsp
Salt as per taste
Oil-1 tsp
Hing-1 small piece
Mustard seeds-1 tsp

Method:

First dry roast moong dal on a pan till you get nice aroma and dal changes color to light brown. Off the gas and put cold water in it and let the roasted dal soak in water for 20 minutes. 

Now this dal can be cooked in two ways. If you want a very mashy type of usli which is easy for the elderly to consume, you have to
put the dal in cooker with enough water till the dal dips in and cook for 2 whistles. 

Or if you want a non sticky usli then don't cook the dal in cooker but directly cook on flame in the final cooking procedure. 

When you cook it in cooker, it cooks completely and mashy this way below.


Final procedure:

In a vessel, add oil, hing, mustard seeds, green chillies, chopped ginger, add roasted and soaked dal. Add water till dal dips and let it cook. Then add  jaggery, salt. Mix everything properly and close. Once the usli gets dry, add scraped coconut and off the gas.

Note: The above procedure remains same for dal cooked in cooker, only you have to skip water as the dal is already cooked. Also to remember is that the main ingredient of this usli is ginger.

So it's very easy to prepare, healthy for children and elderly and can be enjoyed with goan rice and any kind of dal fry or solkadi
