Palak wadis
Palak wadis/ spinach wadis:
Palak /spinach is a healthy green leafy vegetable containing lot of iron, calcium, fibre which are most vital nutrients required for healthy development of our body. But most of the time, we hardly consume this veggie due to it's not so good taste. Its mostly consumed towards North India. In goa, the consumption of this vegetable is very low. But now due to internet, there are lot of recipes readily available which has made goans too to try on the same.
The other day I went to the market to buy some veggies, and the vendor gave me whole lot of 3 big bundles of palak leaves for just rs. 10. I wondered if the leaves are good or not, but he was in a hurry to go home and there was no other customer near him other than me, so he handed over all leaves to me as a complimentary I can say with other vegetables I bought from him. Now the question was how to eat them and how to store them. I prepared some palak puris for my sons tiffin box, then tried my hands on palak pakodas. Still some palak leaves were resting in my refrigerator and were on the verge of their expiry. So I tried my hands on this recipe- palak wadis. Indeed it was nice preparation and result was too good.
Let's look at the preparation.
Ingredients:
Palak leaves- 1 bunch
Besan-1 cup
Rice flour-1/2 cup
Haldi powder-1 tsp
Red chilli powder-1 tsp
Garam masala-1 tsp
Salt as per taste.
Water as required
Oil as required.
Method:
Blanch palak leaves in hot water for 10 minutes.
Then chop them fine. Add haldi, red chilli powder, garam masala, rice flour, besan, salt and add water and mix everything properly to form a thick batter consistency.
Grease a plate with oil, place the above batter, spread all over and steam this in a steamer for 15 minutes. Then cool. Cut into required shapes and shallow fry on tawa using oil.
Serve with rice or with sauce- your choice.
