Carrot malpua
Carrot malpua ( a twisted Bengali recipe- malpua):
Malpuas are traditional Indian sweet desserts of Orissa. Its a famous sweet prepared among the Bengali community during festive occasions. They are also prepared in Rajasthan, Gujarat and Uttar Pradesh. Malpuas are basically sweet pancakes prepared out of refined flour and then soaked in sugar syrup and served with nuts and some prefer milk Rabdi.
In my recipe, I have done slight modifications as to skip refined flour and replace it with wheat flour, ragi flour and sabudana flour and have added some grated carrot to make some healthy malpuas which can be nutritious for our children too!!
Let's look at my twisted recipe.
Ingredients:
For malpua batter:
Wheat flour-1 cup
Rawa-1 cup
Sabudana flour-1/2 cup
Ragi flour-1 tablespoon
Sugar-1 cup
Milk-2-4 cups
Salt-a pinch
Nutmeg powder-a pinch
Cardamom powder-1 pinch
Jeera or fennel seeds-1 tsp
Baking powder-a pinch
Grated carrot-1 cup.
For sugar syrup:
1 cup sugar: 1 cup water
Cardamom powder-a pinch
Oil for deep frying.
For serving:
Chopped pistachio-2 tsp
Chopped badam-2 tsp
Method:
Mix all ingredients for the malpua batter. Add milk slowly till u get a smooth batter.
Keep the batter aside for 30 minutes.
Meanwhile prepare sugar syrup using sugar and water and heat on medium flame till sugar melts and you get a sticky syrup. Add cardamom powder in it and mix.
After 30 minutes, check your batter. It will be very smooth. Heat oil in a pan for deep frying. Once the oil is hot, make the flame to low. Take a ladle full of batter and pour slowly in the hot oil.
Wait for sometime and flip over.
Kindly fry these malpuas in low to medium flame otherwise they tend to get burned.
Then cook till brown on both sides, and remove on a plate.
Dip the fried malpuas in sugar syrup and keep them for 10 minutes.
Then serve with chopped pistachios and chopped badam.
