Ghee rice
Ghee rice (a healthy South Indian cuisine rice):
Ghee rice is one of the famous rice mostly prepared along South coast of India. This rice is prepared using pure ghee made from cows milk and have a combination of spices and nuts along with some veggies. I remember the first ghee rice had in a restaurant at Hubli. Mind blowing rice!! The delicious crunchiness of cashewnuts with sweet delicacy of khismish and fried onions along with delectable aroma of spices and pure ghee makes this rice wonderful.
So here is recipe for you which you can try it out in your kitchen. Its easy to prepare and quick too!! It's best to be had at dinner or can be also relished on a relaxing evening or can be given to your children in their lunch box as its very healthy!!
Ingredients:
Basmati rice- 4 cups
Cashewnuts-1/2 bowl
Khismish-1/2 bowl
Onions -2 big ones long slitted
Green chillies-2
Green peas-1 bowl
Pure ghee-5-6 tsps
Cinnamon-1 stick
Cardamom-3-4
Cloves-5-6
Bay leaf-2
Star anise-2 flowers whole
Ginger garlic paste-2 tsp
Coriander leaves-1 bowl
Salt as per taste
Lemon juice-2-3 drops
Water as required
Method:
Wash your basmati rice 2-3 times and soak it for 30 minutes.
In a big vessel boil water vigorously, add a pinch of salt, lemon juice and a drop of pure ghee. Mix well. Add soaked rice to this boiling water and let it cook. Once half done, press with your fingers and then sieve the cooked rice and keep aside.
In a pan add pure ghee 2 tsp and fry cashewnuts and khismish for 2 mins and remove. Add half of long slitted onions and fry till brown and keep aside.
Finally in the rice making vessel, add remaining amount of pure ghee, add all spices, then add remaining onions. Saute till light brown. Add green chillies long slitted, ginger garlic paste. Add green peas and saute. Add finely chopped coriander leaves and saute. Once green peas are cooked, add cooked rice. Add salt as per taste and mix everything well slowly. Add on top fried cashewnuts, khismish and fried onions and again mix everything very well. Cover and cook for 5 mins on low flame and pour few drops of more pure ghee on top and sides of vessel and spread it with your spatula. Cover and off the flame.
Serve as it is. You can have any chicken gravy in combination to this rice to enhance the quality of your brunch!!
