Sprouted matki salad (sprouted mothbean salad):



Matki or mothbean are legumes which are small brown colored oblong shaped beans widely cultivated in India for its edible pod, sprouts and seeds. These are very protein rich beans and are widely consumed throughout India. Its very much common in Karnataka and Maharashtra cuisines. Now Goans have also started consuming it in the form of usli or tonak. I will give you the recipe of usli in my next post which I often prepare at my house as matki is a very healthy bean. Sprouting the same increases its nutritional value.

Today I thought of preparing a raw salad of matki or mothbean by sprouting them first. Let's look at my recipe.

Ingredients:
Matki or mothbean-1 cup
Onions-1 medium
Tomato-1 medium
Green chillies-2-4
Coriander leaves-1 cup
Lemon-1
Salt as per taste.

Method:

First you need to sprout your mothbeans. For that sort them for any stones in it, wash them nicely and soak for 6-8 hrs.

Then tie them tightly in a muslin cloth and keep on a sieve for another 5-6 hrs. You will get nice sprouts. Mostly soak from morning to night and then tie and keep overnight to get lovely sprouts next day morning as shown in my picture below. Sometimes you get long sprouts but sometimes short depending upon the weather conditions.


Boil the sprouted matki for 5 to 10 mins till tender. Sieve it but do not throw away the cooked water. Its very nutritious and so can be used to prepare Saar or any vegcurry. Now just take the boiled and sieved sprouted matki in a bowl and add long slitted onions, finely chopped tomatoes, green chillies, coriander leaves, salt and juice of lemon.

Mix well and serve immediately.
If you wish to serve later, then add salt and lemon juice only at time of serving otherwise water will set in. Sprouted matki salad tastes awesome and is very nutritional.

This can be served with lunch or dinner.
