Kelyache buns
Kelyache buns ( Banana buns):
Let's learn today a traditional Goan recipe- kelyache buns. Buns are a kind of puris made from an kneaded flour which contains mashed bananas along with some other ingredients.
This is a traditional recipe of Goa made from the ancestral times till today. Its a famous breakfast item or an evening snack in all small hotels of Goa which is called khanaval.
Since my childhood I tasted buns from hotel. Today I thought to let's try the same home. For these buns you don't have to select any special bananas, but very ripe bananas which are about to turn black and often discarded by all are used to make these buns. Nobody likes those bananas which turn black. Their way is always towards dustbin. So why not try something out of them instead of throwing them out?
A quick recipe with few ingredients will make your morning beautiful. Of course some do not prefer to eat any oily stuff in morning, so they can literally prepare them as a part of their evening snack.
So let's start.
Ingredients:
Mashed banana-1-2
Curd-2-3 tsp
Sugar-2-3 tsp
Maida-1 cup
Jeera-1 tsp
Baking soda-1 tsp
Ghee-1tsp
Salt as per taste
Oil as required for deep frying.
Method:
In a big bowl take bananas and mash them very well. You can blend them in mixer also if u wish. Then add curd, salt and sugar and mix very well. Then add maida, jeera, baking soda, ghee and mix well and knead into a dough. See here water is not required as curd and mashed bananas give you watery batter to knead your dough. If required you can add little water to knead the dough. Then apply 2 tsp oil all over the dough and keep aside covered for 8 hrs minimum.
Next day make balls and roll into small thick puris and deep fry them.
You can knead the dough the previous day when you wish to make buns the next day. The more the dough is kept, the more fluffy and soft your buns will turn out.
Enjoy at your tea time in morning for breakfast or evening as a snack.

ReplyDeleteI was wondering how they got a yellow tone. Did you use some haldi powder? Will it change the taste if I do?
ReplyDeleteYes I just used a pinch of haldi powder. Its actually not in method. I wanted slight yellow buns, so used. You can put some food color too if you prefer slight yellow color. Sometimes very ripe bananas also give such yellow color. It dosent interfere with taste. You can try.
