Ros Omelette
Ros Omelette (made with leftover chicken gravy and bones of shredded chicken):
Ros Omelette is the most popular street food of Goa served on local street stalls or gadas in the evenings from 6 to 9pm and people of Goa just gather around in crowds to relish this delicious serving. Its a single dish using a combination of chicken gravy ( Goan xacuti recipe), pao ( Goan local bread) and Omlette. This is a perfect 7 pm hunger snack for a Goan tummy!!
Usually on local gadas or street stalls, the chicken gravy is made using chicken bones, wings and very small chicken pieces. In my recipe here, I have not done this way. Instead I used my leftover chicken gravy and the bones of my shredded chicken pieces which I used for chicken soup. Let me get you clearer on my recipe below. My funda of using chicken is slightly different which i have shared with you. We always bring chicken in more quantity. So then Chicken once bought home can be used to prepare 4 different dishes:
1. Chicken xacuti.
2. Some chicken pieces can be reserved aside for soup.
3. Chicken pieces are boiled and shredded to make soup. The bones are left here. These bones further can be used to prepare Ros Omelette gravy which I have shared here in this post.
4. If xacuti gravy is left without pieces, this gravy can be re-used to prepare delicious anda masala/egg masala. This recipe I shall share later in my blog.
So let's go through my Ros Omelette recipe.
Ingredients:
For chicken gravy:
Onions-1 medium
Tomatoes-1 medium
Green chillies-2
Leftover xacuti gravy-1 bowl
Leftover chicken bones-5-6
Jeera powder-1 tsp
Coriander powder-2 tsp
Haldi powder-1 tsp
Red chilli powder-2 tsp
Hot water-1 bowl
Garam masala-2 tsp
Salt as per taste.
Oil-2 tbls
For Omelette:
Eggs-2
Green chillies-2
Salt as per taste
Pepper powder-1 tsp ( optional)
Onions-1 medium
Oil-2 tblsp
For assembling of Ros Omelette:
Chopped onions-2 medium
Lemon ( optional)
Pao or Goan bread-1 or 2
Method:
First let's prepare the chicken gravy.
Heat a vessel, add oil, add chopped onions, saute well, add long slitted green chillies, chopped tomatoes and saute well. Then add all dry masalas as mentioned above. Cover and cook for 1 minute. Add chicken bones,hot water and let it cook for another 2 minutes. Add leftover xacuti gravy, salt as per taste and give a boil. Your chicken gravy is ready.
Now prepare the Omlettes. In a bowl add eggs, green chillies, pepper powder, finely chopped onions and salt and mix beating eggs thoroughly. On a pan add oil and pour above mixture and make omelettes.
Now finely assemble your Ros Omelette.
Add chicken gravy in a bowl, place the Omelette along with chopped onions and Goan bread( pao).
Place the Omelette on a plate, pour chicken gravy on top, top it up with chopped onions and relish with pao.
Your finally done with your perfect 7 pm hunger snack!!
