Egg fried rice
Egg fried rice( a simple egg fried rice made with egg and some basic vegetables):
An egg fried rice can be made quickly by just mixing scrambled eggs with cooked rice and some spring onions. However it turns out more tastier if you add some basic vegetables like carrot, green peas, capsicum and cabbage also along with egg scrambles.
Let's see the recipe quickly how I prepared my egg fried rice, its a very easy recipe.
Ingredients and method:
Wash and Soak 3 cups of Basmati rice in water for 30 minutes.
Meanwhile chop vegetables like carrot, capsicum, cabbage to fine pieces.
Break 3 eggs in a bowl, add a pinch of salt and 1 tsp of pepper powder, mix and then put the mixture on hot pan with oil. Once it sets like an omelette, scramble it to small small pieces. Remove and keep aside these egg scrambles.
Boil vessel full of water, add 2 tsp salt and 2 tsp oil. Drain water from soaked rice and add in this boiling water and cook for 5 minutes. Drain off on a sieve once its cooked. Then spread the rice on a plate and add 3-4 tsp of oil on top of rice and 3 tsp of salt all over and mix slowly and keep aside.
Now the main process of making the egg fried rice.
In a cooking vessel, add oil, add chopped ginger 1 tsp, chopped garlic 1 tsp. Then add 2 spring onion bulbs finely chopped. Saute for a while. Add chopped veggies. Saute on high flame for 2 minutes. Veggies should remain crunchy so don't overcook them. Add 2 tsp soya sauce, 1 tsp red chilli sauce, 1 tsp green chilli sauce. Saute well. Add 2 tsp pepper powder and 1 tsp salt as per taste.Add the cooked rice, add more pepper powder and mix slowly. Add egg scrambles and mix. Add some spring onion green part.
Close with lid and keep the vessel on tawa, reduce the flame to medium and cook for 5 minutes. This step I do basically as the flavours get well amalgamated with your rice.
Then off the flame and serve hot with more spring onion greens. Your simple quick egg fried rice is ready to eat.
You can try such egg fried rice with only 2 veggies like carrot and green peas or capsicum and cabbage. Its your choice. Try out dear friends.
