Sukhya Galmyache dangar ( Dry shrimp cutlets):




In Goa dry shrimps or sukho galmo are traditionally used since ancestral times in preparation of curries, kismoor, sukhe and dangar( cutlets). Dry galmo is nothing but small prawns dried up, the dried shrimps, they look as below.


In olden times when fresh fish weren't available easily, dry fish took it's part in the Goan menu plate. One of the readily consumed dry fish today by all Goan people are dry mackerals, dry prawns, dry shrimps, dry Bombay ducks etc. There are few recipes of dry fish already posted on my blog earlier which you can go through.


Goan Fisher folks have the special skills to prepare dry fish. They marinate fresh fish in salted water and dry in sun for many days till they are dry. It's their procedure, I do not know in details but have often seen fish drying in sun along few village beach sides of fisher folks homes.

Today I shall show you the preparation of dry shrimp cutlets. I have used the traditional method and combined some more ingredients of my choice to make the cutlets more tastier.

Let's see my recipe.

Ingredients and method.

Take a cup of dry galmo and soak it in water for 10 minutes.

In a bowl add 2 chopped onions, 1 chopped tomato, 2-3 green chillies, 1 cup of scraped fresh coconut, 1 tsp each of haldi powder, red chilli powder, salt as per taste. Mix well. In this add above soaked galmo( dry shrimp). Add 2 tbsp of rice flour, 2 tbsp of Rawa( semolina), 1 tsp of gram flour. Mix everything well. This is the Goan traditional mixture to prepare galmo cutlets.

I have added few more ingredients as below to enhance the taste.

In above mixture I added a fistful of chopped coriander leaves, 1 grated carrot, 1/2 cup of mashed paneer, 1 tsp of garam masala, 1 tsp of chaat masala, 1 tsp of jeera powder, 2 tsp of lemon juice. 

Mixed everything very well and shape them into dangar/ cutlets.



Shallow fry your cutlets on tawa with required oil till golden brown and crisp on both sides.




Serve with Goan rice and fish curry.
