Veg kurma- type 2
Vegetable kurma- type 2:
Vegetable kurma means a gravy bhaji/ vegetable accompanied by vegetables like carrot, cauliflower, beans, green peas etc which gets well blended with a gravy mix. I had posted a veg kurma recipe in my earlier post long back, so today I shall show you another type of kurma which is basically pure Goan style vegetable kurma.
I prepare such kind of kurma most of the time, but due to busy schedules, just miss out to post. So today I made up my mind to do the same.
You can relish it with parata/naan/roti or rice too.
Let's see my recipe.
Ingredients and method:
Chopped roughly 2 carrots, 10 beans, 1 potato, 1/4 th part of cauliflower florets. In a kadai add 2 tbsp of oil, add 1 chopped onion. Saute well. Add above vegetables and saute well. Cover for 2 mins. Add 1 tsp haldi powder and 2 tsp red chilli powder. Saute well. Add 1 glass of hot water. Cover and let the veggies cook well.
In another pan roast 2-3 cloves, 1 cinnamon, 2 star anise petals, 3-4 red chillies, 1 tsp coriander seeds, 1 tsp peppercorns, 1 nutmeg piece small one. Then remove. Then roast scraped coconut 1 cup and add Goan garam masala. Cool and grind with 3 garlic cloves, coriander leaves 2 frigs, tamarind a small ball and required water to fine paste.
Coming to our vegetables, check if cooked. Then add above grinded masala, required water to adjust consistency and required salt. Let it boil. Add on top 2 tsp of kashmiri red chilli powder and I added a tsp of malvani masala for more taste and flavour. 1 tsp of garam masala. Cook for 1 minute and you are done.
Serve with roti/ parata/ chapati/naan or Goan rice.
Note: I always add some more ingredients of my choice for more added flavours. You can skip them if you want a pure traditional method.
