Sungtache hooman amli ghalun/Tor ghalun ( Prawns fish curry with raw mango):
With the onset of raw mangoes (amlyo/tora as called out in Goan language) plunging into the markets, Goans die to buy them to prepare various traditional recipes. Apart from raw mango pickle, raw mangoes are involved in the preparation of curries which range from veg to non veg.
When it comes to non veg, prawns are the hero of the recipe. Prawns fish curry with raw mango is one of the authentic recipe of Goa coming from the ancestral culinary. Goans just wait for raw mangoes which are very tender with a soft inner seed to prepare this curry. The inner seed can be easily removed and discarded. However, the seeds get ripe soon and hard, these are also involved in the preparation of prawns fish curry and it's one of the Goan speciality during the beginning of spring season. Otherwise we add raddish/ hogplums/ drumsticks in our regular prawns fish curry.
Today I shall share with you this authentic recipe of Goan prawns fish curry with raw mango. Goans are totally fond of this curry and it's now a day's common in most of the Goan households.
Ingredients and recipe.
Clean around 10-15 medium sized prawns , apply salt and keep aside.
Wash 1-2 medium sized raw mangoes, peel off their skin and discard. Cut the raw mangoes into average medium sized pieces. If you get a tender raw mango, discard the seed. Or cut the pieces from sides of the seed and include the seed as well in your curry.
Now grind in mixer, 1 cup of scraped coconut, 3-4 peppercorns, 2 red chillies, 1 tsp of red chilli powder, 1 tsp of haldi powder, and a very small piece of tamarind to enhance the flavour of your curry. Add required water and grind to a smooth paste.
Heat a vessel, add 2 tsp of oil, add 1 small sized onion finely chopped. Once it's translucent, add 1/4 th part of your grinded masala, 1/2 cup water and let it boil. Add chopped pieces of raw mango in it. Let them cook. Wash your cleaned salted prawns twice in clean water and add in the curry. Let your prawns and raw mango pieces cook well for 2-3 mins. Then add required salt and remaining of your grinded masala. Stir well. Add water to adjust the consistency of your curry. Give a nice boil and you are done.
Serve with Goan rice and fried prawns.
