Creamy stuffed capsicums:
Capsicums are one of the tastiest edible peppers which we find in different colors like green, red and yellow. They are rich in antioxidants and vitamin C good for your health.
Long back I had prepared a stuffed capsicum dish which is actually a shallow fried dish. Today I thought I shall add some cheese, butter and avoid any masalas or spices and make a creamy stuffed capsicum dish. It's too tasty, here I have also added some milk and potatoes to give you the creamy texture and flavour.
Let me take you to my recipe quickly.
Ingredients and method:
Wash around 7-8 babycapsicums, remove the top part and scrape off the inner seeds part.
Boil 2 potatoes and mash them.
Make the stuffing:
On a pan add 2 tsp of oil, add 1 chopped onion, saute well. Add 1 grated carrot. Then add a cup of corn kernels. Saute well. Add 1 tsp of pepper powder, 1 tsp of parsley and 1 tsp of rosemary, saute well. Add mashed potatoes and lastly add a few crushed kasoorimethi and few coriander leaves chopped. Mix some grated cheese.
Cool this and stuff in each capsicums. Shallow fry stuffed capsicums with required oil on same pan till done.
Add butter and saute the remaining stuffing, add more grated cheese and a cup of milk, let it boil and mix well. Place the fried capsicums on this and pour some butter on top of each capsicum and you are done.
Serve with roti or rice.
