Kangachyo purio

Kangachyo purio ( Sweet potato Puris):

It's Gudi Padwa or Ugadi festival today. The beginning of new year as per the Hindu calendar. People all over India celebrate this festival with different names across the country with various dishes. In every household today a sweet dish holds it's presence in the kitchen apart from many other authentic dishes. 

So today I thought, I will try something which can be relished with breakfast and lunch too!! A dish which is sweet to mark the beginning of new year and to accompany it I prepared a green chutney to add some spicy flavour. So let's relish my sweet and spicy combo.

Ingredients:

2-3 sweet potatoes

2 cups wheat flour or refined flour whichever you prefer

1 cup powdered sugar

1 tsp salt

1/2 cup milk

Little water to knead the dough

Oil as required

Method:

Boil sweet potatoes in cooker for 3-4 whistles. Cool and peel off the skin.

Mash them with a masher. Add wheat flour, powdered sugar, salt, milk and mix well. Sweet potatoes have lot of moisture in them. If your dough gets kneaded with this moisture then there is no need to add more water. If required, you can add little water.

Once dough is ready, apply 2 drops of oil on top and keep in air tight container for 1 hr aside.


After 1 hr, knead again. You will get a soft dough.

Roll into puris and deep fry them in oil till golden brown.



Serve with green chutney.

Green chutney recipe: Grind in mixer 1 cup coconut, a fistful of coriander leaves, 2-3 pudina leaves, 4-5 karipatta leaves, a small ball of tamarind, 2 green chillies, salt, 1 tsp sugar and a sprinkle of water.

Serve this puris as a breakfast or during lunch!!
