Udid dal onion bhonda

Udid dal onion bhonda:

A duplicate dish close to medhuwadas is a udid dal bhonda. In medhuwadas, the wadas are shaped up in round with a hole in centre which everyone is familiar with whereas with respect to udid dal bhondas, they are just round in shape like that of Mysore bhondas or batatawadas.

A traditional recipe of South, Udid dal bhonda is prepared using similar ingredients that of medhuwada but I have incorporated onions to enhance the taste of these bhondas and thus named it as udid dal onion bhondas.

I feel those who face difficulty in shaping the medhuwadas can opt for making these bhondas, tastes same, only compromise on the shape of the wadas. They are easy to prepare and can be easily made with less time compared to medhuwadas.

Usually people prepare it for evening snack but I go for making it for my Sunday breakfast.

If you want to prepare them for breakfast then follow my tips and you can go for it on a pleasant Sunday morning making your family enjoy a slightly different breakie.

Let's go to the recipe.

Ingredients and method:

I am writing the timings here for preparing the wadas for morning breakfast, so you may vary the time according to your choice.

Wash 1 cup udid dal for 3 times in water till you get a clear water.

Soak it for 3 hrs ( 5pm to 8pm). Then throw away soaked water and grind it with 2 tsp water to thick paste. You may add more water if you find it difficult to grind.

Put this grinded paste in a bowl and keep aside for 2 hrs and then keep it in a refrigerator overnight.

Also chop 1 onion, 3-4 green chillies, 10-12 curry leaves, grate 1 inch ginger, few coriander leaves chopped. Keep all this chopped and put in separate bowl in your refrigerator overnight. I cut this in advance since it saves my time next morning. You may cut fresh next morning also, it's your choice.

Next morning remove your batter from refrigerator, add 1 tsp sugar, required salt as per taste and whip it rigorously in one direction till your batter is fluffy and light. To check this take a bowl of water and drop a pinch of batter in it. If it floats then your batter is perfectly light. Or stir more.

Now add chopped onions, green chillies, ginger, curry leaves , coriander leaves into the batter .Add 1 tsp jeera and 1 tsp pepper powder. Mix well. Note that you stir your batter only in one direction so that air fills in your batter to make your bhondas nice soft and fluffy.

Heat oil in kadai.  Keep the flame to medium.

Take a spoonful of batter with your fingers and drop them in oil. You can make 5-6 bhondas or more at a time depending on size of your kadai.Once it rises in oil, flip them and fry them till golden brown.

You are done with your udid dal onion bhondas. Isn't it easy? No tension of slightly watery batter here, nor shaping up of the wadas. Pick and drop the batter like a pakoda, so very simple yet tasty like medhuwadas, crispy outside and soft and fluffy within.

Enjoy your Sunday breakie and make your family happy!!

Serve with peanut coconut hotel style chutney.

    1. Hi, thank you for comment. I suggest you to soak udid dal early morning 8am. Grind at 11 am and keep aside for fermenting , then make your wadas at 6pm. You need to ferment the batter atleast for 6 hrs for good spongy wadas.
