Gajracho halwo (carrot jam):

Carrots or as locally called in goan language 'gazar' is one of the best vegetable which is not only tasty but also nutritious having abundance of health benefits for children as well as adults. Consuming 1 carrot each day gives you loads of vitamin A essential for our eyes and best when u suffer from cold.

Carrots are available in 2 varieties- the orange ones which are to be eaten raw or used in preparation of rice, pulav, kurma etc. The second variety are the red ones which are to be used in the preparation of jam or halwo , thus serves one of the best goan cuisine sweet dish loved by all goans.

Ingredients:
Carrots 1kg
Sugar 1 kg
Milk 1 litre
Dry fruits like cashew nuts, badam, khismish and pista as required
Cardamom powder-2 tsp.
Pure ghee-2 tsp.

Method:
Grate carrot. Cut dry fruits into small fine pieces.
In a kadai or a big vessel ( if ur taking 1 kg carrot), add pure ghee and add grated carrot and saute nicely till soft. Add sugar and stir. Let it cook. Sugar will melt. Then add dry fruits. Stir and let it cook. Then add milk and cook till dry stirring in between. Once dry, add cardamom powder, and give a last stir. Decorate with dry fruits if u need.
