Mushroom egg fried rice:


Mushrooms are one of the favorites among the young and the old. A combination of mushrooms and egg gives an awesome taste to a fried rice. Button mushrooms are cultivated in Goa as well in small gardens, also are readily available in markets of Goa. 

In my receipe I have used button mushrooms and some veges and combined with egg to give a wonderful goan style fried rice.

Ingredients:
1 packet of button mushrooms
2 carrots
1 bowl of green peas
1/2 kg rice
4-5 eggs
Pepper powder-2 spoons
Cinnamon sticks-2
Cloves-5-6
Ginger- garlic-green chilli- coriander leaves paste-1 bowl
Bay leaf-3
Onions-2 medium
Veg Maggie cubes-4-5
Lemon juice-1 spoon
Salt to taste, oil as reqd.

Method:
Wash rice and soak for 30 mins. Then boil water, add 2 drops oil, 1 tsp lemon juice, pinch of salt. Then add soaked rice and let it cook. Check the grains and cook them intact and drain the water and keep aside.
Meanwhile marinate all of the above washed and chopped vegetables with ginger garlic green chilli coriander leaves paste and keep for 30 mins as shown in picture below:



Now in a kadai, add oil, add cinnamon,cloves, bay leaf, onions and saute for 5 mins. Then add marinated vegetables. Saute and close lid and let the vegetables get cooked. Then add salt as reqd, Maggie cubes. Stir. Break eggs and add in this. Wait till a omelette is formed. Stir, add pepper powder. Mix nicely. Now finally add cooked rice and stir very slowly and close the lid and wait for 2 mins and done.
