Sheviyachi kheer

Sheviyachi kheer ( Vermicelli pyssam):



Sheviyachi kheer or pyssam is a famous and traditional Goan cuisine sweet dish prepared on festive occasions like Ganesh chaturti, diwali etc. Its prepared in every house not only in festive seasons but also to celebrate some good moments or as demanded by taste buds of each family. But its preparation marks the happiness celebrated.

Ingredients:
Sheviya or vermicelli-1 cup
Pure ghee-1 tsp
Dry fruits- cashew nuts, badam, khismish as required
Sugar- 1 cup
A pinch of salt
Water-1 cup
Boiled milk- 1 litre
Cardamom powder-1 tsp

Method:

In the cooking vessel roast the vermicelli or sheviyo in pure ghee along with badam, cashewnuts and khismish.  Add a pinch of salt for taste. Then add and allow to boil till the vermicelli gets cooked. Then add sugar as per the sweetness needed by each family. 1 cup sugar is fine for 1 cup vermicelli but do adjust the quantity as sweet as you need. Then once its cooked, off the gas.

In another vessel boil milk and keep. Once milk gets cooled, add the boiled cooled milk to your cooked sheviyo and mix nicely and you are done with your sweet delicious dessert named Sheviyachi kheer. Add cardamom powder. Mix and relish hot or cold by cooling in refrigerator as and when your taste buds demand.

Another method is there wherein after adding milk, you again boil the kheer to get your kheer consistency slightly thicker, but here you need to adjust your milk quantity because once your kheer gets cooled, its consistency gets thickened. So I prefer the previous method of just mixing boiled milk with boiled sheviyo. Here once your kheer cools, you get the exact semi- thickened consistency of your kheer.
