Corn coconut potato cutlets:



Potatoes and sweet corns are favorite of kids as well as adults. What about coconut?
Goans are totally fond of coconut in all their food, typically in their curries. Have you thought of adding coconut to your snack recipe? No, then go through my twisted recipe adding our shrifal- coconut along with potato and sweet corn.

This snack recipe can be given to children in their Tiffin's too if they demand as sweet corns are children's favorite and coconut would play hide and seek with them.

Let's look at the preparation.

Ingredients:
Boiled potatoes-3-4
Boiled sweet corn kernels-1 cup
Coconut scrapings-1 cup
Green chillies-2-3(optional)
Onion-2 medium sized
Coriander leaves-1 cup
Sugar-2 tsp
Salt as required
Cornflour-1 tsp
Besan-1 tsp
Rice flour-2 tsp
Rawa-2 tsp
Oil for frying

Method:

Smash the boiled potatoes. Add boiled sweet corns, chopped onions, green chillies(optional), coriander leaves, sugar, salt, cornflour, rawa, rice flour, besan. Mix everything nicely and make a ball. Make a hole in center and stuff coconut scraping little inside. Then close the ball, give shape of cutlet. Do the same for all balls.




Then keep the cutlets in refrigerator for 15 mins. Then dip each cutlet in coconut scrapings again, then in rawa and shallow fry on tawa with required oil.



Serve with tomato sauce or can be eaten with rice too!!
