Madiyechyo phodi- colacasia tuber fry:

Madi or colacasia are grown inside the ground around some parts of remote villages of Goa. The local vegetable venders bring them to the market to make them available for all goans.

Madi is very itchy tuber in nature so you have to take some precautions if you need yourself saved from the unbearable itch. Prevention is always better then cure and I always believe in these word's and follow them. I remember once I suffered a lot from the itch that I crossed my fingers that no no madi again. But my husband loves this madi tuber preparations which made me do some research for precautions to avoid itch. So here I am giving you the helpful tips to avoid your hands itch. Some use gloves, that's a different story at all😁.
When you bring this madi tuber, just peel off the skin when its dry. Plz do not wash it first because once water touches it, the fungus gets irritating you. Once peeled, carefully with finger tips hold it and cut into roundells and place it in boiling water mixed with tamarind and some kokum petals for 10 mins. Now ends your hand job.
Let's look at further ingredients:
Madi tuber-1 cut into roundels as explained above
Haldi-1 tsp
Red chilli powder-2 tsp
Salt as required
Tamarind paste-1 -2 tsp
Garam masala-1 tsp
Water as required
Rawa-1 plate
Oil for frying
Method:
In a plate take haldi, red chilli powder, salt, tamarind paste and garam masala and add little water and make thick paste. With pair of thongs remove each roundel of madi from the boiled water from my previous step explained earlier and place it in a plate. Apply above paste with spoon on both sides of roundel. Then with thongs remove each roundel and place it in rawa, coat rawa properly on both sides and shallow fry on tawa with required oil.
Serve with rice.
