Maskachi bhaji(moringa leaves vegetable):

Maskapana as called out in local goan language for the popular moringa leaves is widely found over most of the places in Goa. The moringa tree or masks zhad yields multiple number of healthy fruit called drumstick. Drumsticks are used in the veg curries, prawns curries etc...but what about the leaves??

Yes the leaves of moringa tree are also very rich in iron and calcium and are tastiest by nature. In Goa we prepare a dry vegetable out of these moringa leaves or maska pana.

Let's look at the preparation of this leaves forming the part of best goan veg recipes.

Ingredients:
Maska leaves-1-2 big bowls
Jackfruit seeds-4-5
Jaggery-3-4 tsp
Scraped coconut-1 cup
Salt as per taste
Green chillies-2-3

Method:
Maska leaves are a kind of reducing vegetable once cooked. Here I mean to say is these leaves vegetable reduce in quantity once cooked. So more the amount of leaves, its better for a big family. 1 cup of these leaves would yield only 2-3 tsp of the vegetable once cooked.

So first u need to separate the leaves from stems as shown in picture below:

Then apply salt and keep for all leaves for 10 mins.
Next chop jackfuit seeds into fine pieces and also green chillies into long slits.
Now squeeze all the leaves to discard the salted water and them in the cooking vessel. Add jackfruit pieces, green chillies, jaggery, little salt ( remember here to add less salt as you had marinated the leaves earlier with salt). Add 2 fistful of water and let it cook. Cook till dry and vegetable turns soft. Add scraped coconut, mix and off the gas.

Serve with rice and dal or with chapaties.
