Mushroom xacuti and mushroom rawa fry
Mushroom xacuti and mushroom rawa fry:
Mushrooms are called as almi in local goan language and are widely available in rainy seasons before Nagpanchami around the goan villages and remote forest areas. These are then bought down to market by the local vegetable vendors to make them available for all goan people. We prepare a masala or xacuti out of it and also fry them on tawa. The similar xacuti masala can be prepared out of the button mushrooms readily available in all markets. So here I am giving you the recipe of xacuti and fry made from button mushrooms.
Ingredients:
Button mushrooms-1 pckt
Scraped coconut-2 cups
Cloves-3-4
Cinnamon-1 stick
Coriander seeds-1 tsp
Peppercon-4-5
Kashmiri red chilli-1
Star anise petals-1
Poppy seeds-1 tsp
Onions-2 medium
Garlic-2-4 pods
Haldi-1 tsp
Red chilli powder-2 tsp
Tamarind paste-1 tsp
Curd-1 tsp
Tomatoes-1
Capsicum-1
Rawa-1 plate
Salt as per taste
Sugar-1 tsp
Oil as required
Coriander leaves- optional
Method for mushroom xacuti:
First wash mushrooms nicely and marinate with curd, haldi, red chilli powders for 30 mins.
Take a pan and add oil and fry all khada masalas, then 1 onion long slitted, garlic and then at last scraped coconut. Cool and add haldi, red chilli powders and grind all in mixer with tamarind paste and little coriander leaves.
Now in kadai add oil, 1 onion chopped finely, tomatoes, capsicum. Saute well. Add marinated mushrooms, let it cook. Add mixer ground masala, water to adjust consistency of the gravy, salt, sugar and have a boil. Then coriander leaves on top if available.
Note: For local mushrooms, do not add tomatoes and capsicum in final procedure and also do not marinate them earlier but wash nicely till mud is gone and add directly with onion and keep for cooking with required water. No sauting of onion in oil is required.

For mushroom rawa fry, you need to just marinate mushrooms with haldi, red chilli powder, curd and salt and shallow fry on tawa by rolling each mushroom piece in rawa and frying on tawa with oil as required.
