Sheviyacho upma/ pulav
Sheviyacho upma/ pulav:
Sheviyo or vermicelli are widely consumed all over India for breakfast and dessert preparations. Here I have made my version of pulav, a simple to make recipe but very tasty one. Everyone has heard about rice pulav or fried rice, in this dish I have replaced rice with sheviya- vermicelli...let's look how?
Ingredients:
Sheviya or vermicelli-2 cups
Chopped carrot-1 cup

Sweetcorns kernels-1 cup ( optional)
Green peas-1 cup

Green chillies-2 long slitted
Spring onions-2
Cinnamon-1 stick
Cloves-2-3

Red chilli flakes-1 red chilli cut into fine.
Maggie cube veg-1
Salt as per taste
Sugar-1 tsp
Water-4 cups
Lemon-1/2
Oil as required
Chopped coriander leaves as required.
Method
First in a vessel boil water , add a pinch of salt, lemon juice and 2 drops of oil. Add sheviya and let it cook. Check in between. Drain it over sieve with muslin cloth. Pass cold water through it immediately. Drain. Put 1 tsp of oil , mix and keep aside.
In a pan add oil, cloves, cinnamon, chopped spring onions, saute. Then add green chillies, chopped carrot, green peas and sweet corn kernels ( optional). Let them cook. Add red chilli flakes, salt, sugar and Maggie cube. Mix well. Finally add the sheviya which you had cooked and drained. Mix well slowly. Add chopped coriander leaves on top if available.
