Tomata bhaji

Tomata bhaji:

Imagine your hubby brings loads of tomatoes and to your notice, some are on the verge of their expiry...I mean very ripe..red...then? Cool...then you can try out my goan veg recipe, a vegetable preparation which can be relished along with chapaties or puris or goan bread-pau etc as part of your breakfast or as part of your lunch.

This vegetable turns out more tastier only if you prepare it out of red ripe tomatoes. So here goes my recipe:

Ingredients:
Tomatoes-4-5 ripe ones
Onion-1 medium
Ginger garlic paste-1 tsp
Green chillies-2
Haldi powder-1 tsp
Red chilli powder-2 tsp
Coriander leaves-1 cup
Sugar-4 tsp
Salt as per taste
Jeera powder-1 tsp
Coriander powder-1 tsp
Garam masala-1 tsp

Method:
In a kadai, add oil, chopped onions. Saute and then add green chilies. Add chopped tomatoes. Saute. Add haldi, red chilli powder, garam masala, ginger garlic paste. Saute. Add sugar and salt. Add little water. Close the lid and let it cook. Then add jeera powder, coriander powder. Mix, give a boil. You can adjust the consistency by adding more water. Tomatoes should get cooked in a very fine mashy form. Once boiled, add coriander leaves, mix and done.
