Zhadekangachi bhaji

Zhadekangachi bhaji:

Zhadekanga are the underground stems preferably grown in goan fields and available in huge quantities during the onset of winter season. They are among the categories of sweet potatoes but these are not sweet in nature. They look like below picture.

These zhadekanga are grown underground so they are full of mud. In goa they are removed from the soil of fields, well cleaned with water and then boiled with salt till cooked. Some prefer consuming them this way, some have their vegetable. So here I am sharing with you goan veg recipe of their vegetable preparation.

Ingredients:
Zhadekanga-2 cups
Chopped green chillies-2-3
Scraped coconut-3 tsp
Jeera-1 tsp
Mustard seeds-1 tsp
Hing-1 small piece if hard one or 1 tsp if powder
Sugar-2 tsp
Salt as per taste
Oil-1 tsp.

Method
First wash the zhadekangas in water severely till mud goes away approx for 3-4 times. Then boil them with salt till cooked. Cool and de- skin them. Discard off their skins and you will get whitish- creamish colored zhadekanga as shown below:

Then prepare the vegetable as follows-
In a cooking vessel add oil, hing, jeera, mustard seeds, green chillies. Saute for a second. Add de- skinned zhadekangas, salt, sugar and mix. Add scraped coconut and mix and off the gas. Remember this vegetable is dry in nature.

Serve with rice or chapaties.
