Amleche lonche/ toranche lonche (Goan style instant raw mango pickle):





 

The word 'pickle' make our mouth water and the pioneers are the fresh  Raw mangoes/ amlyo/tora. The moment you take their names and your taste buds just pour off the saliva.

Well , pickle are liked by everyone on this earth except a few , and I must say raw mangoes are the leaders in pickle. These are seasonal fruits which start their availability in the months of January till May. People of Goa pick them up for the preparation of yearly pickle. Raw mangoes are demandable in every corner of market and thus some of the fresh raw mangoes go to small scale industries too for pickles preparation which are readily available throughout the year.

Today I am going to show you the preparation of instant goan style raw mango pickle.

Ingredients:
Raw mangoes-3-5
Methi seeds-1 tsp
Peppercorn-1 tsp
Mustard seeds-2 tsp
Hing-3-4 pieces
Red chilli powder-3-4 tsp
Salt as required
Oil-1 cup

Method:
Cut raw mangoes into square cubes and apply salt and keep aside for 10-15 mins.

Dry roast methi seeds, peppercorns, half of mustard seeds nicely till mustard seeds splutter. Off the flame and add half of hing. Mix. Cool and grind to a powder.

In this powder add red chilli powder and more of salt and mix well.

Heat oil and cool.

Add little oil in above powder mixture and nicely mix everything and add salted raw mango cubes and mix everything very well.


In a small pan add again little oil, half of the hing and mustard seeds. Once mustard splutters, off the flame. Cool and add to the mixed pickle mixture. Again mix everything properly.



Transfer the pickle into a China clay container or a glass container. Pour remaining heated cooled oil on top and close.






Consume after 1 hr. You can store the container in refrigerator every night and remove every morning and keep outside till you finish consuming this pickle. In my house everybody prefers to eat fresh pickle, so I always prepare fresh one for my family which is finished in just 2 days.
