Goecho upit-rawa upma/khara bhath:


Upit is called in goan language to rawa upma or khara bhath and is one of the famous goan breakfast menu or an evening snack. To prepare a perfect restaurant style rawa upma, you need to put the ingredients in proper proportions. Also the type of rawa used and the time of roasting it holds much value.

Rawa upma/upit as I call it as goecho upit because I have prepared it in goan style which a goan would prefer to have it for his breakfast. This is a perfect morning dish as it fulls your stomach as well as its healthy in its own way.

Let's look at the preparation.

The following things you should keep note of while preparing this recipe:

1) Always use thick rawa and not the fine one.  A thick rawa will yield you a very fluffy nonsticky upma but if you use fine rawa, your upma will turn out into a sticky mashy dish which would disappoint you at end.

2) In Goa, we use pure ghee and more you use, the best upma you will get.

3) Always use boiling water.

4) Upma can be prepared with or without onion. If you like to prepare without onion, you need to add shredded ginger, chopped tomatoes and more of karipatta leaves to enhance the taste.

Ingredients
Rawa-1 cup
Hot boiling water-2 cups
Onion-2 medium
Green chillies-3-4
Coriander leaves-1 cup
Pure ghee-1 cup
Karipatta leaves-1 or 2
Sugar-2 spoons
Salt as per taste
Oil -1 tsp
Mustard seeds-1 tsp
Hing-a pinch
Scraped coconut-1 cup

Method:
Roast rawa in half cup ghee on medium flame till nice aroma. Keep aside.

Keep water for boiling.

In vessel add oil, hing, mustard seeds, green chillies, karipatta leaves, chopped onions.
Saute well. Add roasted rawa, sugar, salt, coriander leaves, scraped coconut. Mix and add boiling water on top, mix, cover and cook for 2 mins. Open and mix well. Add remaining ghee and do the final mixing and you are done.

Decorate with coriander leaves and scraped coconut.

Serve with lemon and hot tea.
