Kurllyanche sukhe
Kurllyanche sukhe-crab dry masala-goan style:
Kurllyo or crabs- this word when heard make everybody's mouth water, in fact are favorites among all fish lovers of Goa as well as non goans.
Crabs are very tasty shellfish widely found in Goa either in deep sea which we goans call ' daryachyo kurllyo' or those which are found in between deeply buried or hidden inside the rocks called as ' khadpi kurllyo'. Khadpi kurllyo are more tastier than daryachyo kurllyo and we prefer to buy only khadpi kurllyo for our preparations.
Crab preparations differ in different states, but the best one is of Goa I can proudly say. Today I am going to give you the preparation of crab dry masala- the goan way.
Cleaning of crabs:
The first and foremost the most important thing is to clean the alive crabs. I always plan crab preparations for the next day because their cleaning becomes easy with no risk. Crabs are alive most of the time when fisherwomen comes to sell them. So cleaning them when they are alive is risky and tedious procedure since crabs are ready on one leg to hurt you...😁....so why take risk...
Just tell your fisherwomen to pack them in 2 plastic bags and dump them in deep freezer for min 4-5 hrs for them to die. So no danger at all to clean them then.
Wash them severly changing 2-3 times water so that they are clean. Now separate the legs out of them. Now take a stone and hit hardly on eyes side keeping crab straight. You will see the shell breaks open. Now from the empty shell, remove all of liquidy flesh to your vessel.
Next remove the blackish fins inside which look like grapefruit flesh and are bitter in taste. Clean everything nicely with water and break into two parts. Then the big fat legs- remove the teeth in front banging by stone and also bang stone on it at 3 places so that you can eat the flesh inside it once cooked without giving trouble to your toothmolars. Small legs can be retained as they are since they are soft in nature to break with your teeth compared to the fat legs. I have given picture below of cleaned crab final pieces for cooking below:
Just clean and break into pieces as shown above, don't marinate with anything, not even salt.
Ingredients:
Cleaned crabs-4-5 cut into desired pieces as shown
Onion-2 big size finely chopped
Tomatoes-1 chopped
Green chillies-2-3 long slitted
Garlic pods-3-4 smashed
Scraped coconut-1 bowl
Haldi powder-1 tsp
Red chilli powder-2 tsp
Garam masala-1 tsp
Sugar-1 tsp
Salt as per taste
Oil-1 tsp
Water as required
Method:
In a vessel add oil, chopped onions, tomatoes, green chillies and garlic smashed. Saute well.
Then add haldi, red chilli powder, salt, sugar and cleaned crabs and required water and allow to cook nicely till crabs are well cooked. Once crabs change color, they are cooked, it takes hardly 5-10 mins. Then add garam masala on top and mix nicely and cook till semi dry. Off the gas and keep it covered for 1-2 hrs for flavours to get mixed properly.
Serve with rice.
