Okra/ ladyfingers/ bhendi/ bhene are the best vegetable widely found all over throughout the year. Many of them love this vegetable whereas some hate due to their very sticky nature. However they are the most tastiest vegetable if one has ever relished. Okra or ladyfingers are prepared in various ways in different states and countries. In Goa too, we prepare a dry vegetable out of it or just fry them on tawa.

Going through my recipe here, I would like to mention that I innovated this new recipe by stuffing paneer inside each bhendi and shallowfrying them on tawa. Paneer is the most delicious product made from milk and various preparations of paneer just make our mouth water. Stuffing bhendi with paneer was an awesome idea to make my each bhendi have the mix flavour of paneer and some mixed ingredients. Its very simple and quick to prepare.

Let's go through the procedure.

Ingredients:
10-12 okra/ladyfingers/bhendi
Onions-1 or 2 medium sized
Green chillies-2
Coriander leaves as required
Paneer-4-5 small cubes
Haldi-1 tsp
Red chilli powder-2 tsp
Red chilli sauce-1 tsp
Tomato ketchup-1 tsp
Salt as per taste
Sugar-1 tsp
Oil for frying
Rice flour-1 plate

Method:
First wash all okras and wipe with cloth. Make a long cut slit open in the middle of each okra.

Apply salt and keep aside.

Prepare the stuffing -in a pan add oil, onions, green chillies, haldi, red chilli, red chilli sauce, tomatoe ketucp, mashed paneer, salt, sugar, coriander leaves.

Cool and fill each Okra/ ladyfinger/ bhendi  with small portion of each stuffing.


Dip the stuffed okra in rice flour and shallow fry on tawa with required oil. Fry on both sides till crisp turning on both sides carefully.


Serve with rice.
