Amlechi uddamethi- raw mango udadmethi:



Raw mangoes, as soon as they flourish their way in the markets people just go to buy their hands onto it. There is no soul in this world who doesn't love fresh raw mangoes. Goans prepare variety of recipes with raw mangoes. The first recipe every year is pickle. Then gradually the taste buds crave for amlecho ros, amlechi uddamethi, amleche godlonche, khalatli amli, chepnatli amli, and so on....

Today I am going to show you the preparation of raw mango udadmethi or as called out in local konkani language as amlechi uddamethi. This recipe consists of awesome combination of udad dal and methi seeds whose aroma wins over the entire dish. And yes of course the khatta taste of raw mangoes and the meeta taste of jaggery makes it mouth watering. So let's go through the procedure.

Ingredients:
Raw mangoes-4-5
Jaggery-2 cups
Scraped coconut-2 cups
Methi seeds-1 tsp
Udad dal-1 tsp
Kashmiri red chillies-2
Red chilli powder-2 tsp
Salt as per taste
Hing-2 small pieces of khada hing
Mustard seeds-1 tsp
Oil-1 tsp
Water as required
Karipatta-1

Method:.
Peel off the raw mangoes and cut them into small square pieces.

Grind coconut, kashmiri red chillies, red chilli powder, salt, jaggery with required water to make a semi thick masala.

In a vessel add oil, hing, mustard seeds, karipatta, udad dal, methi seeds. Stir, and add raw mango pieces, little water and let it cook. When raw mangoes are cooked , add mixer ground masala. Add required water to adjust the consistency. Give a boil and off the gas.

Serve with rice.

  1. Prepared it few times now this torr season. enjoyed every drop of the curry with and without rice. so I added jaggery quite a alot. almost equal to coconut. 2 cups of both as you mentioned. was slightly skeptical...however results was yummy :) thank you. your blog is my kitchen :)

I sometimes add ingredients in appromiappr manner, a rough estimate, but to write the measurements in the recipe I analyze it , so here and there could differ.   3. You can add jaggery here according to the amount of raw mangoes you use and it's sourness. So you will be out of doubt. ❤️
