Papad-vodiyanchi kismoor
Papad-vodiyanchi kismoor/Ash gourd chips and papas raw chutney:
Ash gourd chips or vodiyo as called out in local goan language are best in combination with roasted udid papads to give you a special delicious side dish called papad- vodiyanchi kismoor. Its performs well in all the religious ceremony menu cards of Goan hindu culture. This dish is actually a sister of pickle you can say because its not a curry nor a vegetable preparation. It also doesn't come under any veg fries nor a starter or a snack. But goes well as a side dish like a pickle sister to serve your taste buds the best.
Its one among the favorite side dishes of all goans.
Let's look at its preparation which is quite simple and quick.
Ingredients:
Vodiyo/ ash guord chips-10 now
Papads-5-6
Scraped coconut-1 cup
Chopped onion-1 medium
Red chilli powder-1 tsp
Salt as per taste ( slightly on lesser side as papads and vodiyo already contains salt)
Tamarind paste-1 tsp
Coconut oil-1 tsp
Method:
Mix scraped coconut, chopped onions, salt, red chilli powder, tamarind paste and half of coconut oil and nicely mix and keep aside.
Now dry roast papads on direct flame and break them into small small pieces.
Slightly roast vodiyo in remaining coconut oil on a pan and let it cool. Now make small small pieces.
Just 10 mins before serving, mix above roasted papad pieces and vodiyo pieces in above coconut onion mixture and mix nicely.
Serve with goan rice and Sol kadi.
Note:
You can add haldi powder if you wish as some do not like the taste of raw haldi.
Do not keep the preparation for long hours after mixing roasted papads since the moisture of onions get absorbed by the papads which turn them soft and soggy which do not taste good. So serving this dish and finishing it off at once should be on the look.
Also you can prepare such kismoor with only papad without adding vodiyo or vice- versa as i have shown below kismoor with only papad using haldi powder too!!
Here below is the kismoor prepared with only vodiyo!!
Both taste superb!! So go ahead!!.
