Nirphanas ani makyacho ros (Breadfruit and Corn tephala curry):
Nirphanas means breadfruit and moko means corn. Nirphanas is a very delicious vegetable and often used in goan preparations, usually used in khatkhate - a mix vegetable curry. Nirphanas tastes yum when tawa fried and is a common fry dish in veg days in most of the goan homes during seasonal availability of this breadfruit. Corn is mainly consumed boiled or roasted on charcoal , khatkhate or is used in upma, appams etc. In goan homes, a veg tephala curry is prepared out of colacosia tuber stem or raddish or brinjal. Today I thought I would try to prepare the similar veg tephala curry but by using corn and breadfruit.
The other day I saw a post on Facebook which showed a tephala curry using only breadfruit. I learnt the recipe and tried to use some additional instincts of mine and prepared this breadfruit and corn tephala curry. Here is the detailed recipe.
Ingredients:
Breadfruit-1/2 cut into square pieces- 1 cup
Sweet corn-1 cut horizontally into pieces.
Scraped coconut-2 cups
Ziti tephala-10 nos. ( green raw tephalas)
Haldi-1 tsp
Red chilli powder-2 tsp
Bedgi red chillies-2
Peppercorns-4-5
Jaggery-2 tsp
Tamarind paste-1 tsp
Salt as required
Water as required
Method:.
In a cooking vessel add breadfruit and corn pieces with water till they deep and let it cook.
In mixer grind scraped coconut, haldi, red chilli powder, bedgi red chillies, tamarind paste, jaggery, peppercorns and required water and grind to fine paste. Then add 5 ziti tephala ( ziti means raw green) and again grind till smooth paste.
Once breadfruit and corn gets cooked, add above grinded masala, salt, and required water to adjust the consistency of the curry. Give a boil. Then just bang remaining tephala with a stone till they get smashed well and add in the curry. Let it boil and you are done.
Serve with goan normal rice.
Note: If green (ziti) tephala are not available, this curry can be prepared using the dried black tephala, the taste will slightly differ.

Black dried tephala look this way, where they open up once dried in sun, then u need to discard the black inner seed and use only the outer covering.
