Shankarpali - a festive sweet faral:


Shankarpalis are among the sweet faral prepared on the occasion of festivals like Ganesh Chaturthi, Diwali, Dusshera, Christmas etc. Its actually the most commonly made faral which are made in every homes during festive seasons. Children love them a lot. I remember when I was small, my mother used to prepare these shankarpalis in bulk and keep in bid dabbas which we kids hogged upon during our entire festival holidays.

Nowadays people are so busy, specially working women that they don't get time to prepare these at home and so bring readymade ones and enjoy their festivals. I was also among them, I hardly prepared any faral at home during festivals. But this year thought of preparing some at least. Today I am going to share with you the recipe of my shankarpalis which I had learned from my mom but there is a little bit of difference which I made to it to make it more simpler and quick to make for you.

Let's look at the recipe.

Ingredients:
Maida- 4 cups
Powdered sugar-1.5 cups
Salt-a pinch
Pure Ghee-1/4cup
Water-1/2 cup
Oil as required for deep frying

Method:
First in a vessel take water and add powdered sugar to it. Mix nicely till sugar is dissolved. Then heat this water little, not too much. Keep aside.

Take maida in a plate and add salt. Then heat ghee and pour into this maida. Mix evenly with the help of spoon. Then knead the dough using above heated sugary water little by little. Please do not add additional water, this sugary water would be sufficient to knead your dough. Your dough would be very hard. Keep it aside in a clean plastic or air tight container for 1 hr.

After 1 hr, see your dough would be very much hard. The real struggle and hard work lies here. My mom used to beat this dough with a hard stone or hard wood block. I used my hands to beat the dough and then kneaded more and more. Then it turns slightly soft. Enough. Now make some big 3-4 balls out of it. Take a roller pin and roll into a round chapati. Cut off the side edges and turn the chapati into square shape. Now cut the chapati into many squares as shown in my picture below.


Heat oil till very hot. Put your cut Shankarpalis into it and then make the flame to low. Let the shankarpalis fry on low flame..



Use your spatula to just turn them over in between and fry till light golden because once you remove them out, their frying process gets continued and they change color to more darker side.


Let them cool nicely and then store them in air tight containers with papers inside and on top.

I prepared them for my Diwali this year and you also try them out.
