Prawns egg fried rice- Chinese style

Prawns egg fried rice in Chinese style ( shrimp fried rice with egg in Chinese style):



Fried rice and what comes into our mind is Chinese style fried rice. China are best in making fried rice. The ultimate crunchiness of the veggies and awesome flavour of soya sauce and aginomotto makes the dish grand.

Today I tried making Chinese fried rice using prawns or shrimps and egg. However I have skipped ajinomotto as it's not health friendly.

Let's look at my recipe.


Ingredients:
Basmati rice-1 kg for 7 members
Cleaned prawns-1 cup
Eggs-6
Chopped carrot-1 cup
Frozen green peas-1 cup
Spring onions-2 wigs
Chopped onion-1 big
Butter-2 tsp
Oil as required
Salt as per taste
Coriander leaves-1 cup
Pepper powder-2-4 tsp
Ginger garlic paste-2 tsp
Lemon juice-2 tsp
Soya sauce-2-4 tsp
Green chilli sauce-3 tsp
Long slitted green chillies-3-4

To marinate prawns:
Haldi-1 tsp
Red chilli powder-1 tsp
Pepper powder-1 tsp
Lemon juice-1 tsp

Spices:
Cloves-6-7
Cinnamon-3
Star anise-2
Bay leaf-1

Method:
Wash basmati rice and soak in water for 30 minutes.

Marinate prawns with ingredients given above and keep for 10 mins.

Break eggs , add a pinch of pepper powder and salt and mix.

Heat water , add 2 cloves, 1 cinnamon, 1 star anise and let it boil. Once it boils vigorously, add a pinch of salt, lemon juice, 2 drops of oil. Add soaked rice and let it cook for 5-7 minutes. Check and once it breaks nicely, drain and keep aside.

In your fried rice making vessel add oil, and add marinated prawns. Saute well for 4-5 mins till prawns are cooked. Remove and keep aside.

In the same vessel, add eggs mixture and wait till omelette sets in. Then cut it with your spatula into many pieces and remove and keep aside.

Now in same vessel add more oil, add butter and remaining spices, then add chopped onions and white part of spring onions. Sauté well. Add ginger garlic paste and sauté. Add chopped carrots, green peas, green chillies and saute. Add a pinch of salt. Saute well. Do not overcook, the veggies need to be crunchier. Now add sauted prawns and egg omlette pieces. Add soya sauce and green chilli sauce, lemon juice and mix well. At last add cooked rice, required salt, pepper powder, coriander leaves, green part of spring onions and mix everything very well slowly.

Serve hot with long slitted onions!!
