Maskafulanche sungtaghalun dangar ( Drumstick flowers cutlets made with prawns):
A Goan traditional cuisine recipe:
Maska zhad- Moringa plant is a very yieldful tree. Its leaves - as called as moringa leaves or maskapana in Goan language is used to make vegetable which is very delicious and consumed by all Goans. Drumsticks are the fruits yielded by this tree which are widely consumed by all Goans as well as non Goans in their different veg and non veg preparations. The last tasty element of this tree are the drumstick flowers. These flowers begin forming before drumsticks, the drumsticks are actually formed from these flowers. However there are various preparations of drumstick flowers in Goa which our ancestors prepared, thus making moringa leaves, flowers, drumsticks forming part of Goan traditional cuisine.
Drumstick flowers are very delicious in nature. They start to begin on the moringa trees during winter to spring season i.e from December- January-February. If you pluck them up, you can cook them in various Goan traditional preparations. If you keep them as it is, they would flourish into beautiful drumstick fruits further.
Today am going to show you the preparation of drumstick flower cutlets using prawns which is one of the Goan traditional preparation made by our ancestors. This is a non veg preparation as I have used small prawns/shrimps. You can skip prawns and make a veg preparation. Addition of prawns into the cutlets give an awesome taste.
So let's look at the preparation.
Ingredients:
Drumstick flowers-1 bowl
Chopped onions-1
Chopped tomatoes-1
Chopped green chillies-2-3
Chopped coriander leaves-1 cup
Small prawns/shrimps-1 cup
Scraped coconut-1/2 cup
Rawa-1 cup
Rice flour-1/2 cup
Besan-1 tsp
Sugar-1 tsp
Salt as per taste
Haldi powder-1 tsp
Red chilli powder-1 tsp
Garam masala-1 tsp
Water - a fistful
Method:
Gather all ingredients as shown below. Clean prawns. Mix chopped coriander leaves, scraped coconut, haldi, red chilli and garam masala powders.
Chop drumstick flowers into very fine, add it into mixture of chopped onions, tomatoes, green chillies. Also chop prawns into small pieces and add to the same.
Also add rawa, rice flour, sugar, salt, besan into coriander leaves, masala powder mixture.
Use water and mix both mixtures together into a final thick batter.
Shape them into cutlets.
Shallow fry on tawa using required oil till crisp on both sides.
Serve with Goan rice and Sol kadi.
