Sprouted matki usli (Mothbean dry vegetable preparation):



Matki or moth bean are dark brown colored legumes/ beans rich in protein content is widely consumed all over India among the vegetarian population especially towards the Maharashtra and Karnataka side. Its prepared in various ways as per different culture of each state. Matki or moth beans are sprouted to increase it's nutritional value and consumed in the form of usli, usal, gravy vegetable, salad etc.

Today I am going to show you the preparation of sprouted matki usli which is mainly consumed all over India. I prepared it in my own way with not much masalas and not much of difficult steps.

Let's go through the recipe.

Ingredients:
Matki-1 cup
Chopped onions-2
Chopped tomatoes-1
Chopped coriander leaves-few for garnishing
Chopped green chillies-2-4
Haldi powder-1 tsp
Red chilli powder-2 tsp
Garam masala-1 tsp
Jaggery-2 tsp
Salt as per taste
Water-1 fistful
Oil-2 tsp

Method:

First you need to sprout matki. For that soak a cup of matki or moth beans in required amount of water overnight.

Next day tie the soaked matki in a muslin cloth and keep on a sieve. You shall see the sprouts coming all over your matki grains by evening. So its ready for preparation. You can either take it for preparation immediately or can keep the tied muslin cloth as it is with sprouted matki within inside the refrigerator and can take it for preparation next day.

For preparation of its usli, go through below steps.
Heat a vessel, add oil, add chopped onions and saute well. Then add chopped tomatoes, chopped green chillies. Saute very well till tomatoes are soft. Then add haldi powder, red chilli powder and mix well. Add sprouted matki and mix. Add fistful of water, close with a lid and let the matki cook well. After 5 mins, add salt, jaggery and again mix well. Once the water dries up, you are done.


Garnish with coriander leaves.

Serve with chapati or rice.
