Sukhi bharilli vaingi
Sukhi bharilli vaingi ( stuffed brinjals in dry form):
Vaingi or brinjals are most common among vegetables consumed all over India. Stuffed brinjals is one of the most tasty and on demand dish in the family. Stuffed brinjals or bharilli vaingi is prepared in different ways across different states. Each states masala differs. In Goa it's prepared using coconut masala ( you can view that recipe in my previous post) whereas towards Punjab or other northern parts of India, they use groundnuts more in the masala to give it a unique taste.
I have tried this stuffed brinjals in my kitchen in different ways, all tastes are different but each ones aroma and delicacy remains unique. However today I tried my own recipe to prepare a different masala, which is in a dry form, without any heavy masalas to stuff the brinjals and cook them with just a fistful of water. I have also included cheese in my recipe, which gives an awesome taste to your final product. So I have named it sukhi which means dry, sukhi bharilli vaingi ( stuffed brinjals in dry form). Here there is no gravy, no masala, its just in a dry vegetable form. You can prepare such dish even by chopping off brinjals into fine pieces and cooking them, but when you stuff them, their tastes differs from the latter.
So let's start to learn my recipe!!
Ingredients:
Small local brinjals-5-10 nos
Chopped onions-2
Chopped capsicum-2
Chopped coriander leaves- a fistful
Haldi powder-1 tsp
Pav bhaji masala-2 tsp
Cheese cube-1
Salt as per taste
Sugar-1 tsp
Oil-2-3 tsp
Water-1 fistful
Method:
Wash the brinjals and discard the top stem and cut with long slits (4 or 8) halfway only so that your brinjals remains intact. I have made 8 long slits as shown in my picture below. Apply salt and keep aside.
In a pan, add oil, chopped onion. Saute well till soft. Add chopped capsicums. Saute well. Add coriander leaves. Add haldi, pau bhaji masala, sugar and salt and mix everything well. Let it cook for sometime. Then add grated cheese and mix well and off the gas. Let the mixture cool down.
Then stuff the mixture in the brinjals as shown below.
Take a pressure cooker and add little oil below. Place all stuffed brinjals on it and add a fistful of water on top and pressure cook for just 2 whistles and you are done.
Remove the cooked brinjals on a pan and decorate with more coriander leaves and serve hot with chapati or rice.
This is a kind of easy recipe wherein there is no involvement of roasting any masala, nor grinding. Also its quick as I prefer to make it in cooker, where the brinjals get cooked very well and nowhere does any remain raw. Some prefer to do it on pan,but it takes longer time. That's each ones wish, you can skip cooker and cook on pan too. Cooker saves time and makes the product cook well!! So proceed with my recipe and am sure everyone reading my blog would love it!!
