Chakryo ( Chakli ) ( Goan traditional chakri recipe):

A warm welcome again to all my blog readers. When the festival of Diwali is upcoming , preparation of all traditional eatables blossom around each and everyone's household. In Goa too, Diwali is celebrated with pomp all over and traditional Goan festive dishes or which are called as faral start their existence in every Goan household. Diwali is celebrated among the Hindu community of Goa and I have shared with you earlier some festive dishes like Goan coconut sweet nevryos, Goan coconut spicy nevryos, Shankarpalis, ladoos etc. Today I would like to share with you famous tastebud tickling Goan traditional chakri recipe.

Diwali is celebrated all over India and Diwali without chakli is impossible. It is prepared in various ways depending on each state culture and as carried from their respective ancestors. Some prepare out of rice flour, whereas some with besan, or maida or some with butter. Now in markets too, we get different varieties of chaklis. However, Goan love the typical taste which they have been relishing from their childhood. So today I shall share with you a similar kind of Goan traditional chakli recipe.

Ingredients:
Maida-2 cups
Rice flour-1 cup
Besan or gram flour-1 cup
Powdered sugar-1 cup
Jeera-2 tsp
Sesame seeds-2 tsp
Haldi powder-2 tsp
Red chili powder-4-5 tsp
Melted ghee/vanaspati-2 tsp
Lukewarm water as required
Salt as per taste

Oil for frying

Method:

Roast jeera and sesame seeds.
Prepare dough of chakli by mixing all the dry ingredients except ghee and water.
Mix nicely.
Heat ghee and add in the mixture and mix again.
Then heat water and add in the mixture slowly little by little and knead into a dough.


Keep the dough closed for 30 minutes only. If you keep the dough for more time then your chaklis will break down in oil.

Then after 30 minutes, divide the dough into 4 parts. Put one part in your chakli maker and make nicely shaped chaklis on a oil greased plastic sheet.

Make all chaklis and simultaneously heat oil in a kadai.

When oil is hot, put the chaklis in oil and lower the flame and let them cook on low flame. Turn them in between and then remove after they are golden brown.

Drain oil and keep them on a paper to cool completely.

Once they are cooled, transfer them into a air tight container.

Certain tips to follow :
1. If your chaklis don't come up properly from chakli maker, if they don't go round but break off, then your water content used is less while kneading the dough. So again take your dough and add more water and nicely mash your dough more.
2. If your chaklis get breaks off in oil, then your rice flour, sugar and ghee quantity added has become more. So to rectify, again put more maida and besan to your dough and knead again.
3. Sugar and spice content should be added according to each ones preference.

Through lots of failures in my attempt to make chaklis, I have come up with the above important points. Follow them and yes, never forget to grease your chakli maker with oil 2 days before hand so that its not too hard on your hand while making chaklis otherwise its a very tedious job.
