Potato bhaji with tomato ( no onion, no garlic potato bhaji):
Hello everyone,
Today I would like to share with you another version of potato bhaji which is prepared using tomato. Its a very simple and easy to prepare vegetable which can be relished for breakfast with chapathi or bread. This potato bhaji has no onion, and no garlic so can be consumed by those who avoid these two ingredients in their daily meal. Adding tomatoes give this vegetable a unique taste and flavour.
Also this kind of vegetable is made slightly semi watery or can be said as a second version of patal batata bhaji, the first one shared long before in my blog.
Let's go through the recipe.
Ingredients:
Boiled potatoes-4-5
Chopped tomato-1
Chopped green chillies-2-4
Chopped coriander leaves- a fistful
Sugar-1 tsp
Salt as per taste
Water to adjust the consistency of vegetable
For tempering:
Mustard seeds-1 tsp
Asafotedia-2-3 pieces
Jeera-1 tsp
Curry leaf-1
Haldi powder-1 tsp
Oil-2 tsp
Method:
Chop boiled potatoes into fine cubes.
In a vessel heat oil, add all tempering ingredients one by one. Then add chopped green chillies, tomatoes and saute till tomatoes are soft. Then add chopped boiled potatoes and give a stir.
Meanwhile boil a cup of water and add to the above bhaji till you get a semi watery gravy consistency. Add salt, sugar and give a boil.
Add coriander leaves and off the gas.
Serve with chapathi or bread.
