Spicy stuffed green brinjals ( a twisted recipe of stuffed brinjals using kolhapuri spicy masala):
Hello everyone,
Welcome to my new twisted recipe of stuffed brinjals in kolhapuri style tried in my kitchen for the first time and turned out damn awesome in taste and aroma. I really love kolhapuri cuisine for its very spicy flavour. I and my hubby always prefer to make our tastebuds tickle for spicy kolhapuri dishes on our plates while eating outside in restaurants, which could be either veg or non veg. Really I salute to the unique masala combinations of kolhapuri cuisine which make their every dish not just tempting to eyes but also delivering a real mouth watering flavour.
After tasting dishes in restaurants , I thought why not give a trial at home. I had green brinjals with me, therefore thought to give a try for a stuffed brinjal recipe. The net is akways right in our hands and my surfing began. But alas, i was not satisfied with any kind of stuffed brinjals recipe. Then came an idea of doing some twist. I surfed to find out chicken kolhapuri recipe, so i used gravy masala recipe of chicken kolhapuri dish in my green brinjals and the outcome was fantastic. You can try out friends and am 100% sure you will be surprised by the unique delucting taste.
To begin with, let me tell you that green brinjals are more tastier then the purple ones and also good with respect to health benefits. So I chose to try with them. Purple brinjals are the common ones which are cooked often. Try this recipe with green brinjals only.
Ingredients:
Green brinjals long ones-5
Onions-3 medium size long slitted and 1 finely chopped
Tomato-1
Coconut-1 cup ( optional- dry coconut or mix both)
Ginger-1 inch
Garlic pods-5-6
Dry masala ingredients(13No's):
Coriander seeds-3-4 tablespoons
Peppercorns-6-7
Cloves- 7-8
Cinnamon-2 small sticks
Sesame seeds-2 tablespoons
Poppy seeds(khuskhus)-1 tablespoon
Masala elaichi ( black cardamom)-2
Green elaichi( green cardamom)-2-3
Badishep(fennel seeds)-1 tablespoon
Fenugreek seeds-1 tsp
Dagadful ( star anise)-1
Zaipatri-2
Bedgi mirchis ( dry red chillies spicy ones)-4-5 or optional red chilli powder-3 tablespoons.
Oil as required
Jeera powder-1 tsp
Coriander powder-1 tsp
Kasuri methi-1 fistful
Coriander leaves-1 fistful
Bay leaf-1 or 2.
Salt to taste
Sugar as per your choice and taste.
Water as required
Method:
Dry roast all 13 masala ingredients.
In oil, roast coconut. You can use dry coconut pieces if available or can use the fresh coconut. I have used both mix. Roast nicely till coconut turns light brown.
Then roast long slitted onions in little oil. Once brown, add chopped tomatoes, garlic and ginger. Nicely roast. Here itself add red chilli powder if you don't have dry red chillies with you as even I didnt have and so added red chilli powder here itself.
Then cool and grind everything to a smooth paste.
In a vessel, add oil, add bay leaf and finely chopped onions. Saute. Then add above grinded masala paste and saute very nicely for 5 mins till oil oozes out. Add salt, sugar, jeera powder, coriander powder, coriander leaves, kasuri methi. Mix nicely. Cover and cook for 2 minutes. Off the flame and cool. Fill this masala paste in each brinjal. Reserve remaining masala paste.
Then heat the same vessel again. Add oil and place stuffed brinjals and toss them nicely. Cover and let them cook till slight brown on both sides. Turn them in between. Then add hot water and let the brinjals cook.
Now add remaining masala paste and stir well. Cover and let the brinjals cook completely.
In between turn the brinjals. Cook till you get a semi thick gravy.
And you are done with your beautiful aromatic kolhapuri flavoured stuffed green brinjals dish ready to be served hot with chapati/parota/rice etc.
