Egg ghee roast
Egg ghee roast ( from the Mangalore cuisine):
Egg ghee roast is one of the delicious recipe from the city of Mangalore. This South Indian delicacy i was always inspired to learn looking at the posts on Facebook by my Manglorean friends. They always posted paneer ghee roast, chicken ghee roast. I thought of trying the same with eggs. And here it was, a very tempting and yum sukha type recipe, very easy to prepare, without any hard core spices.
I prepared this recipe with paneer as well as eggs for 2 times, everyone loved the gravy taste. So thought of sharing the same in my blog here.
Here I have prepared a semi dry gravy, you can dry it out completely, it tastes awesome.
Ingredients and method:
Boil 5 eggs and cut into half.
(Below roasting ingredients depend upon quantity of eggs used)
Dry roast 5-10 bedgi red chillies, 2 tablespoons coriander seeds, 1 tsp peppercorns, 1 tsp jeera, 1 tsp fennel seeds, 1 tsp methiseeds.
Grind with 5 cloves of garlic, tamarind, jaggery and water to paste.
In pan add 2 tbsp of ghee, roast boiled egg halves carefully on both sides till nice crisp and keep aside.
In the same pan add 2 tbsp of ghee, add 1 chopped onions, 2 green chilies, 4-5 curry leaves. Saute well.
Then add above grinded masala, saute well.

Add little bit of water( cleaning from mixer), curd 4-5 tbsps, saute well.
Let the gravy turn to Semi dry. Add salt and 1 tsp of garam masala.
Then put roasted egg halves and let it cook.
Turn the egg halves carefully.
Cook till semi dry consistency and off the flame.
Serve with maida Roti's/naan/parata.
