Sabudana vada ( shallow fried on a pan with less oil):




Sabudana or sago are the most popular snack or breakfast dish among the Maharashtra community. Marathi people consume sabudana during fasting rituals. Sabudana or sago is one of the non cereal food source which is rich in carbohydrates and fibre which keeps your gut healthy and keeps you energized during fast. It also has potassium which controls your blood pressure. One can include these sabudana in your regular diet as well as its rich source of calcium and benefits you to have a control on your weight too.

Does anyone know what is sabudana is?
Well, it's extracted from topioca roots, then passed through a starchy process, sieved to form pearls and this pearls are dried up. Its a big procedure, but just for your information.

Coming to my recipe, I made these vadas on a pan by shallow fried method. Usually sabudana vada are made via deep frying method, however deep frying usually leads to lot of oil absorption is these vadas making them too oily and unhealthy. So its better to them in an appam pan ( which I had prepared them earlier, recipe is already on my blog), or on a pan fried method using less quantity of oil.

Let's go to my recipe.



Ingredients and method:
Boil 5 medium size potatoes. De-skin and mash them with your hands.
Wash 1 cup of sabudana or sago 2 times in water and soak it in water for 2 hrs. Water should be added just to deep the sabudana. You will see they get nicely soft and non sticky.

Grind 1 cup of groundnuts to powder.

Now the main sabudana mixture:
Take mashed potatoes, add 5-6 chopped green chillies, a bunch of coriander leaves finely chopped, salt 1-2 tsp, sugar 2 tsp, 1 tsp jeera, groundnut powder, 1 tsp red chilli powder. Mix everything very nicely. Now add soaked sabudana, and juice of 1 lemon. Mix everything very well and keep aside for 10 minutes.

Make the shape of vadas, you can either make round balls or flat shaped. I have made flat shaped vadas.

Heat a tawa or pan, add required oil, then place all your vadas on pan, and shallow fry them on both sides by flipping on both sides till crisp. Sabudana vadas take more time to turn brown, so take care to make them on medium flame, flipping on both sides.

Serve with chutney for breakfast or as a snack during evening tea snack.
