Tavshyache appam

Tavshyache appam ( cucumber appam/mini tavsali):


All must have heard, prepared and ate 'Tavsali', the most famous delicious Goan sweet delicacy made from cucumber, in English you can call it as cucumber cake. Its prepared in all Goan homes. Everybody has its own way of preparing it, some roast the rawa, mix it in batter and then bake whereas some steam the batter directly.

Instead of the longest procedure of making tavsali, I tried to make appams out of this tavsali batter and to my surprise they came out so wonderful that everyone loved them a lot. I made a very quick and easy recipe, which can be prepared in few minutes and can be a great option for breakfast as well as evening tea snack. I would rather love to call them ,'mini tavsali'.


So without wasting much time, let's go to the procedure.

Ingredients:
Cucumbers-3 medium size
Rice flour-1 cup
Rawa-1 cup
Jaggery-1 cup
Scraped coconut-1 cup
Cashewnuts-1/2 cup
Cardamom powder-2 tsp
Salt-1 tsp
Milk-1/2 cup
Baking powder-1 tsp
Ghee as required

Method:
Peel the cucumber skin and grate them fine. Add jaggery, salt to it and keep it aside for 30 minutes. You will notice that your jaggery will melt up. If some pieces are left then you can crush them with your fingers to make a even mixture.

Meanwhile chop the cashewnuts into fine pieces.

Then add rawa, rice flour, scraped coconut to this mixture and mix everything very well.

Add chopped cashewnuts, cardamom powder, milk, baking soda and again mix well. Keep this mixture aside for minimum 2 hrs or overnight in refrigerator. I kept it overnight to make my appams for breakfast.

So next day, heat your appam patra. Add 1 tsp of ghee in each depressions. When hot, reduce your flame to low.

Again give a quick mix to your batter and add a spoonful of your batter in each depression and cover.


After 5 mins, open the lid and flip your apppams. Add again a tsp of ghee on each appam and cover.

After next 5 mins, open the lid and insert a knife in each appam to see if its done. If your knife comes clear, then its done or keep closed to cook for another 2 mins.



Flip till its crisp on both sides and remove.

I have a 12 depression appam patra and I had to do the appams in 3 batches. So this quantity is sufficient for 10 people.( depends on each ones choice on sweet tooth).

So relish them hot as it is for breakfast or evening tea.



So isn't my mini tavsali quick and easy, then big tavsali??
