Green peas fried rice
Green peas fried rice ( a simple fried rice with only green peas and regular rice):
Till today I have prepared pulao using green peas which are already posted on my blog- instant green peas pulao and green peas biryani in cooker. Pulao can be easily prepared mixing rice and vegetables and cooking together. Today I thought I shall make a simple fried rice using only green peas and regular rice.
Cooking rice first and then stir frying with veggies is little bit time consuming process but the final results are awesome giving you a non sticky rice.
Usually I use basmati rice to prepare any kind of pulao or fried rice as the grains become long, non sticky and flavour is awesome. However today I tried making my fried rice with the lachkari wada kolum rice (normal rice) as I had a short of basmati rice and my decision to make fried rice was on the spot. But I took proper care not to overcook my rice and also more care during final stir fry.
Lachkari wada kolum rice is the best rice in quality , having lovely aroma and preparing normal rice for regular lunch with this rice becomes very nice, bright white, small sized grains and non sticky.
If you add more vegetables to such kind of rice then it will become a veg fried rice, since I have used only green peas, I named my rice as green peas fried rice.
So let's look at the recipe.
Ingredients and method:
Wash 2 cups of basmati rice or normal rice 3 times. Then soak it in water for 15 mins.
Meanwhile chop 1 big onion into fine, 3 green chillies into long slits, 5 cloves of garlic into fine, 1 inch ginger into fine and a cup of coriander leaves into fine.
Now heat a vessel, add around 7-8 glasses of water approx and let it boil. Add 1 bay leaf, 1 black cardamom and 1 green cardamom. Add half lemon juice, 2 tsp of oil or ghee and 2 tsp of water. Drain the soaked rice on sieve and add in this water to cook. Cook for 5-7 mins, check the grain ( do not overcook your rice, just the grain should break and not press) and drain on sieve. Run some cold water over it and keep the sieve aside. Once full water gets drained add a tsp of oil and spread with a spoon all over your rice.
Now the final process. Heat a big vessel, add 2-3 tsp of oil, add 10-12 pieces of cashew nuts and roast till brown. Remove and keep aside. Add spices in same- 2-3 cloves, 1 cinnamon, 2 star anise, 1 bay leaf, 2 black cardamom, 2 green cardamom, 1 javitri. Then add chopped onions. Saute well. Add a tsp of butter and saute well. Add ginger and garlic pieces and saute. Then add green chillies. Saute very well. Add green peas and saute. Cover and let it cook. Then add a tsp of salt. Cover and cook for 5 mins on low flame. Then add 2 tsp of soya sauce, a tsp of black pepper powder and mix well. Add cooked rice, chopped coriander leaves, another tsp of black pepper powder and 2 tsp of salt and mix everything slowly so that your rice grains don't break. Then add 2 tsp of ghee on top and sides of your dish and cover for 2 mins.
You are done. Off the flame and let it rest aside for 15 mins.
Serve hot!!
Note: This rice looks brownish in color due to soya sauce.
If you don't like soya sauce, you can skip it. Instead can add a veg maggie cube or can skip this too, it's your wish. Anyways your spices and black pepper powder gives your rice the perfect aroma and flavour.
