Mix vegetable Rawa appam ( tadkewala Rawa appam):
Appam or yellape as called out in Goan language are often prepared in a sweet form. However if made in spicy form they make a wonderful breakfast though. I have tried making appams of different kind like corn appam, palak ragi appam, oats appam etc , the recipes have been already posted earlier in my blog.
Today I have given a tadka ( tempering) to my appam batter so called as tadkewala Rawa appam. I mostly used leftover dosa batter for my appam preparation. However, today I have used just 2 ingredients- Rawa and rice flour to make my appam batter. Few mixed vegetables have been tossed out and mixed in the batter to give your appam an amazing taste and flavour.
Let's quickly go through my recipe.
Ingredients and recipe :
Preparation of batter-
In a bowl add 2 cups Rawa, 2 tsp curd, 1 cup rice flour. Mix well. Add 3 cups water. Mix and keep aside for 1 hr. Add salt, mix well.
Vegetables tadka preparation-
Oil, 1 tsp of udid Dal, 1 tsp of mustard seeds, chopped karipatta, 2 chopped green chillies. Saute well. Add 1 medium chopped onion. Saute well. Add 1 grated carrot. Saute well. Add 1 cup of corn kernels. Saute. Add 1 tsp sugar and salt. Mix well. Add 1 cup of scraped coconut. Mix and off the flame.
Add above vegetables tadka preparation to your batter. Mix well.
Heat your appam pan.
Add 1 tsp oil in each of the depressions.
Add 1/2 tsp of Eno salt to your batter and add 2 drops of water over it, you will see the froth, now mix well in your batter slowly.
Once the oil heats properly in your appam pan, add a spoonful of batter into each depression. Cover and let it cook on medium flame for 2 mins.
Then open and flip over all the appams with another spoon. Cover again and let it cook.
Do it till your appams are crisp and golden brown on both sides.
Once done remove and serve your appams with chutney.
