Idli batter mix vegetable appams ( tadkewala appam):
Appams are one of my favorites among the breakfast options. I have prepared appams of various types like corn appams, ragi palak appams, rawa appams, cucumber appams etc which I have already posted on my blog earlier.
Today I have made appams out of idli batter and added some tempered mix vegetables into it. Idli batter make your appams rise up like an idli giving it a very soft spongy texture.
So let's go to the recipe.
Ingredients and method
For the batter:
Soak 1 cup udid Dal and 2 cups rice into water for 4-5 hours. ( This is the exact ratio for any idli batter).
Grind it with very little water to form a semi thick paste. Cover and keep aside to ferment overnight.
Heat a pan, add 2 -3 tsp of oil, add 1 tsp of mustard seeds, 1 tsp of asafotedia, and 4-5 chopped curry leaves. Then add 4-5 chopped green chillies. Saute well. Add 2 chopped onions. Saute well. Add 1 grated carrot. Saute well. Add boiled corn and mix well. Add salt and 1 tsp of sugar and a fistful of chopped coriander leaves. Mix well. Cool and keep this in refrigerator.
Next day morning, add 1 tsp of salt in the fermented batter, mix well. Add above vegetable mixture into it and mix well.
Heat a appam pan, drizzle each depression with 1 tsp oil. Pour a spoonful of batter in each depression, cover and cook for 3-4 mins. Then flip over and again cover and let it cook on other side till crisp and golden brown.
Remove them in a bowl and serve hot with green chutney.
Green chutney recipe:
Heat a pan add a tsp of oil, add 1 tsp of udid dal, 4-5 curry leaves, 2 green chillies. Saute well. Add this mixture to a bowl of coconut. Add 1 tsp sugar, salt, small tamarind, coriander leaves and 4-5 pudina ( mint ) leaves. Add a fistful of water and grind to a chutney. This green chutney can be served with various breakfast items and snacks.
