Mix vegetable rice without sauces: 



Fried rice is actually a rice prepared first and then tossed with green, red and soya sauces with few vegetables of your choice.

Today I have prepared a mix vegetable rice without sauces where in I have cooked rice first and then mixed it with the sauted vegetables and a few spices. I have skipped addition of sauces. This is a kind of vegetable pulao, with only difference in the method of preparation.



Ingredients and method:

Wash and soak  3 cups of basmati rice for 30 minutes.

Cut 2 carrots,  few beans into fine pieces. Chop 2 onions, 3 green chillies, 5 garlic cloves, 1/2 inch ginger and few coriander leaves.

Cook rice:

First boil 7-8 cups of water, add a tsp of oil, 3-4 drops of lemon juice and 3-4 drops of oil. Add spices like 2 cloves, 1 cinnamon, and 1 star anise. Drain soaked rice on sieve. Add in this boiling water and cook till soft. 

Drain and spread on a plate and put 3-4 drops of oil and required salt all over and mix well and keep aside. 

Preparation of rice:

Heat a vessel, add 5-6 tsp of oil, add spices like 3 cloves, 1 cinnamon, 1 black cardamom, 1 green cardamom, 1 bay leaf. Add green chillies, ginger and garlic pieces. Saute. Add chopped onions. Saute well till soft. Then add chopped carrot and beans. Add 1 tsp butter. Saute well , close and cook for a while. Then add 3 veg Maggie cubes , 1 tsp black pepper powder and a tsp of salt. 

When your veggies are half cooked, add rice and mix. Add coriander leaves and again a tsp of black pepper powder. Mix well slowly.

Close with lid and keep the vessel on a tawa and let it cook for another 5 mins on medical flame.

Off the flame and pour some butter on top and sides of the vessel, cover and let it rest for a few minutes. 

You are done with your mix vegetable rice without sauces. The main ingredient here is black pepper powder and veg Maggie cubes which give your rice an ultimate flavour without addition of any sauces. 


Serve hot!!


Now you can see your rice is similar to a vegetable pulao only here you get a non sticky rice, as compared to a pulao where your rice is always sticky. So those who loves a non sticky veg pulao can opt for this method.
