Chicken tikka( tawa fry)

Chicken tikka (tawa fry):

Hello friends, after the end of all our hindu festivals  we crave for fish or chicken on our plate. Our gut bloats up with all the oily and spicy faral items from Diwali festival from Nevryos, shev, chiwda, poha, sweet dishes like sweet milk poha, jalebis, fenoris, peda, gulabjamuns, laddoos etc. So our tastebuds crave for something spicy and soul satisfying meal.

Our children crave for a spicy chicken dish. Fish is a kind of regular item on Goans plate but chicken is not so often. But when chicken arrives in our kitchen we run to prepare a gravy out of it. Chicken xacuti is the most common chicken recipe, the most demanding and standard chicken dish in Goan homes, whose recipe I have already shared in my blog earlier.

However keeping aside chicken xacuti,  nowadays our children love fry chicken recipes like chicken lolipop,  chicken kabab, deep fried drumsticks chicken or dry chicken sukha. They love to lip smack only the leg pieces and do not prefer the gravy much. So today I have shared with you the chicken tikka recipe which I prepare in my kitchen by the easiest procedure on our regular tawa. Usually chicken tikka is made on a tandoor but  I have learnt that it can be easily made on tawa too. You can try once and am sure you will really love the method and the final outcome of it. And friends believe me the chicken pieces gets cooked perfectly by this way, better then the deep fried ones. Also oil consumption is less compared to the deep fried pieces.

So let's start .

Ingredients and method.

I always count ingredients on my finger tips. It's easier to remember them when you start on your preparation. So for this recipe you need 12 ingredients for marination of chicken.

Wash 3 times your raw chicken and then marinate it with following 12 ingredients.

Measurement for 1 kg chicken pieces :

You can go for just drumsticks or leg pieces cut into small pieces or a boneless version, it's your choice.

1tsp haldi powder, 2 tsp red chilli powder, 2 tsp Kashmiri red chilli powder, 1 tsp jeera powder, 2 tsp coriander powder, 1 tsp any chicken masala/mutton masala/garam masala, 2 tsp ginger garlic paste, 2 tsp salt as per your taste, 1 lemon juice, half cup curd, 2-3 tsp kasoorimethi crushed into your palms, and at last 2 tsp of  regular cooking oil.

Mix all above ingredients and apply on washed chicken and marinate it and keep overnight in refrigerator (not in freezer) or if you plan to do it immediately, then keep marinated for minimum 1 hour.

Drumsticks marinated:

Legpieces marinated:

Heat a hard cast iron tawa or a non stick one as you prefer and add 2 tbsp butter and 2 tsp oil. Place the chicken pieces on it.

Chicken drumsticks kept to fry on tawa:

Let it cook uncovered for 5 mins. Turn the pieces. Then do it on other side. Now cover it with a bowl and let it cook on medium flame flipping on both sides after every 2-3 mins.

Check with knife if your chicken is cooked.

Then keep it covered so that it's done on dum. Off the flame.
